Vegetarian chili - 11/11

1 (28 oz) can diced tomatoes
4 cups vegetable broth
1 (15 oz) can ea black beans, white cannellini beans, kidney beans, lima beans and smaller can of "Mexican"
corn- all drained and rinsed
1 cup chopped onion
several stalks chopped celery
1 green pepper chopped
2 cloves garlic mined
1 package McCormick original chili seasoning mix
1/4 cup + of Salsa
2 teaspoons cumin
1 teaspoon coriander
1 tablespoon oregano
salt and freshly ground pepper to taste
couple small cans of V-8 juice (5.5 oz ea)

Combine and cook in dutch oven or slow cooker...
I have added some ingredients over time i.e. chili mix, V-8 juice...
feel free to add any other ingredient.


2 (8z.) packages cream cheese, softened
1/4 c. thawed orange juice concentrate
2 T. sugar
zest of 1 orange
1/4 t. cinnamon
1/2 c. chopped dried mixed berries (or cranberries or raspberries, etc.)
1/2 c. finely chopped pecans

With electric mixer beat together cream cheese through cinnamon until fluffy.
Stir in fruit and nuts.
Refrigerate at least one hour.
